Lamington
Recipe
Sponge Cake
1/2 cup of butter
1 cup of sugar
1 cup of flour
3 eggs
1 teaspoon baking powder
4 tablespoons of milk

Beat butter and sugar.

Add eggs well beaten with the milk.

Sift in flour and baking powder; flavour with vanilla or lemon to taste.

Bake in sandwich tins at 180°C for 25 minutes or until a skewer inserted in the centre comes out clean.

Place in the fridge and cut into squares the next day.
Middle Icing (optional)
3 OZ. of icing sugar
1 OZ of butter

Beat these to a cream and spread between two layers. Each square of cake, when doubled (with icing in between) will be the shape of a cube.
Outside Icing
3 OZ. of icing sugar
1 OZ of butter
3 teaspoons or more of cocoa
Vanilla to flavour
Desiccated coconut

Ice all over the cube with the cocoa icing, spreading with a knife, then dip and roll in desiccated coconut.
